As fall rolls around it is time to start using up the last of the harvest. One of those plants that seems to keep on giving is zucchini. Seems a little of it goes a long way. The following is a recipe I have gotten from Mary Fisher, an Amish friend in PA. I have made these several times and they are always very tasty.
Mary (and Mike’s) Zucchini Sweet Pickles
Zucchini Mix:
- 16 cups zucchini, cubed
- 4 cups onions, Sliced
- 2 cups carrots, cut and steamed
- 2 head cauliflower
- 4 red peppers, chopped
- 1/4 cup salt.
Syrup:
- 12 cups water
- 4 cups vinegar
- 6 cups sugar
- 2 tsp. turmeric
- 1 1/2 tsp. garlic powder
- 2 tsp. celery seed.
